Calidad de la carne de terneros de la raza autóctona pajuna en dos sistemas de producción Agrociencia

Resumen: Un reto de la ganadería moderna es la conservación del patrimonio genético autóctono amenazado por las razas mejoradas, y la justificación para conservar las razas ganaderas precisa de una revalorización de sus producciones. Con el objetivo de mostrar las posibilidades productivas de una raza bovina autóctona española en peligro de extinción y contribuir a su desarrollo, este estudio presenta por primera vez las variables de calidad de la carne de terneros de la raza Pajuna criados en dos sistemas de producción: semiextensivo (pasto y alimento concentrado, Sem) y extensivo (pastoreo permanente, Ex). También se analizaron los cambios en las variables de calidad de la carne durante 7, 14 y 21 d de maduración. Un panel de consumidores no entrenados...

Effect of sex and fat depot location on fat composition of Rasa Aragonesa lambs Agrociencia

The quality of lamb fat is important in sheep carcass markets because it affects the degree of acceptance by consumers. In Spain, consumption of beef and lamb is important and young lambs are highly valued. In addition, the precocity of the female determines slaughter at younger ages than males, to avoid excessive fat. Therefore, the effect of sex and fat depot location (omental, mesenteric, kidney knob, subcutaneous, intermuscular and intramuscular) on the fatty acid composition in 30 Rasa Aragonesa lambs (15 males and 15 females) of 24 kg live weight and three months of age, were studied. Oleic, palmitic and stearic fatty acids were the main fatty acids making up the fat in all the fat depots from lambs. There were no significant differences (p>0.05)...

Effect of slaughter weight on fat composition in lacha lambs Agrociencia

Due to the fact that domestic consumers prefer low fat meat, the lamb production system in Spain is based on slaughtering low weight animals (12 to 24 kg). Lambs in other European countries are slaughtered at higher weights because consumers prefer more intense flavored and fatter meat. Based on evidence that slaughter weight affects fat characteristics, the effect of slaughtering weight on the fatty acid profile of omental (OM), mesenteric (MES), kidney knob (KK), subcutaneous (SC), intermuscular (IN) and intramuscular (IM) fat in Lacha breed lambs was studied. Influence of season on intramuscular fatty acid profile of fighting bull Agrociencia

In Spain, beef from Fighting Bulls is traditionally consumed during spring and summer festivals but there are few studies on fatty acid profile from of these bulls. The objective this study was to evaluate the effect of slaughtering season and year of breeding on fatty acid composition of Spanish Fighting Bull intramuscular fat. The study was carried out during 2006 and 2009 seasons in Seville and Pamplona using a sampling survey methodology.
